The perfect easy introduction to healthier baking. These yummy cookies are so simple and are naturally sweet from apple puree, honey and cranberries. Kids will love them and they are the perfect snack for on the go, full of slow release energy (scroll to the bottom for nutrition values).
50g self raising flour
70g apple puree
1/4 tsp vanilla essence
40g dried cranberries
Get your oven on 190C (170C Fan). Combine the oats and flour in a mixing bowl. Melt 70g butter in a jug or pan and add in the apple puree, vanilla essence and honey and give it a good stir. In a mug, crack one egg and whisk it up using a fork. Make a well in the oats and flour and slowly stir in the butter mix and then the beaten egg to make a sticky dough. Finally throw in your cranberries (if you are wanting a real treat - throw in some white chocolate chips too!). Lay baking paper on a baking tray. Roll 8 balls of dough and squash them into cookies on the paper. Bake for 12-14 mins, or until golden brown.
